30 Minute Chocolate Chip Cookies

This quick chocolate chip cookies recipe is my go-to recipe for the easiest chocolate chip cookies.

They’re a classic chocolate chip cookie, so simple to make and best of all – no freezing time! 

They’ve got a soft centre with a slightly crunchy outside. I like to add some sea salt flakes when they’re hot out the oven to give them an extra bit of flavour.

What’s important is to leave ample space between each of your cookie dough balls before baking, as they will spread more than you think! I like to cook mine in two batches, or you could bake two batches at once (just keep an eye on the bake time).

Ingredients


 120 g Unsalted Butter, Soft
 80 g Light Brown Sugar
 85 g Demerara Sugar
 35 g Whole Egg (crack the egg, whisk it, then weigh 35g)
 ½ tsp Vanilla Paste
 140 g Plain Flour / All Purpose Flour
 1 g Baking Powder
 ½ tsp Salt
 100 g 70% Dark Chocolate, chopped

Method

Add the soft butter, light brown sugar and demerara sugar to a bowl and beat for 3 minutes until light and fluffy (or longer if you’re doing it by hand).

Add the egg and vanilla and beat again.

Sift in the dry ingredients then add the chocolate. Stir to combine.

Roll the mixture into 65g balls and place onto a baking tray (make sure you leave enough room for them to spread).

Bake at 190C for 12-14 minutes.

Leave to cool to room temperature, or eat straight away!
