I loved putting together this afternoon tea series. If you’re a beginner baker, start with the scone and the madeleines – they are perfection! More advanced? Take your pick! What else would you like to see?

Starting with a classic – the humble scone. I tried out so many variations of this, but this one’s perfection. If you like yours stuffed with raisins and rustic around the edges then this one’s not for you – I’ve gone perfectly smooth and beautiful!

One of my all time favourite bakes – the madeleine. Perfect to eat at any time of day, these ones melt in your mouth. I could (and have) eat the whole tray.

Some sort of choux pastry is a must for afternoon tea in my opinion. I’ve gone for a choux bun with the ultimate flavour combination – pistachio and raspberry. So decadent, SO delicious.

This one’s a real showstopper. I finished it with an optional chocolate velvet spray which just elevates the whole thing. I’m particularly happy with how this one turned out.

An afternoon tea classic. Perfect the layers by using a silicon sponge roll mat and pastry rods – you’ll thank me later! You can’t go wrong with cofee and chocolate in my opinion, so this has to be my favourite.
